Silver Needles "Yinzhen" is the premier representative of white teas from China.
Most Yinzhens today come from Fujian or Guangxi provinces, though the one from Mt. Jun remains the most prestigious. The short plucking season and the large number of tea plants needed to make a small quantity of tea, makes white teas an extensive art form. The tips are plucked in the forty-eight hours or less after sprouting. The tender tips are covered in silver-white hairs.
Produces a fragrant, sweet, light-yellow tea with full body and a subtle spring-like flavor.
